Happiness: Rainbow Jell-O

You have 72 hours to contact me!!!!

I've been in a funk over the past week.
I loathe funks.
So I decided to share a old favorite happy recipe
and spread some happiness.

You'll need FIVE 6oz boxes of Jell-O.
I used 5 different colors.

TWO boxes of Knox Gelatin
One can sweetened condensed milk

Step One
Mix 3 packages of Knox gelatin in 1 1/2 cups boiling water.
Mix until dissolved.
Add sweetened condensed milk to Knox gelatin mixture.
Set aside.

Step 2
Mix 3 packages of Knox gelatin with 1 1/4 cups boiling water.
Mix until dissolved.
Set aside.

Step Three
Dissolve 1 box of Jell-O in 1 cup boiling water.
I started with blue because I wanted it on the bottom.
You can start with whatever color you'd like :)

Step Four
Add 1/4 cup of the Knox gelatin mixture to the Jell-O.
Pour into a 9x13 glass dish.

Step Five
Now the waiting begins!
Let set in the refrigerator for 20-30 minutes.
I did 20 minutes and my layers were perfectly set.

Step Six
Pour 3/4 cup sweetened condensed milk mixture over the Jell-O layer.

Step 7
Let sweetened condensed milk layer set up in refrigerator.
I let mine set 10 minutes and it was golden.
While I waited, I repeated Step 3 with the next color.
That way I was ready to add the next Jell-O
when the milk layer was set.

Repeat Steps 3-7 with the remaining four flavors.
Do not try to be speedy and use the freezer :)
My layer order was: blue, milk, green, milk, yellow, milk, orange, milk, redAnd VOILA!
You now have a beautiful rainbow Jell-O
to wow your friends and children :)

It can sit out of the refrigerator for up to three hours.
You can dig in with one big bite.

Or you can pull it apart and eat the layers separately like my Boy :)

Enjoy!

ETA: Because the process takes a couple hours to complete,
your milk mixture and your Knox gelatin mixture
might solidify during the process.
Don't panic!
You can just pop them in the microwave for 15-20 seconds
and VOILA! back to liquid form.

I had a friend in grammer school, her Mom always made rainbow jello. I thought that was so cool. I never knew hownit was made.... Until know. Thanks, that is so fun, can't wait to try it.

Yum! My Mom always makes this on Christmas Eve. I think it would be fun any time :) Yeah for finding something fun to do when you were in a funk. I have kind of been in one lately too. I cannot seem to shake it. Heres to hoping for a little shake this week :) Maybe I need to make this!

Okay, how awesome is this?!!??
Mom of nine here (hello!! waving my hand at ya!!!) and we love us some Jello over here...but I'm so very B O R I N G and just make it in a bowl, and then just spoon it out for them. I've been doing this for 18+ years. I know, very boring. My poor kids. I'm ashamed.

That... is flippin' awesome. I seriously bought 8 boxes of gelatin today, although I think I only ended up with three different colors - rats! But I will totally be trying this! I love little things like this to break out of any doldrums. :D

I also make it with sour cream or yogurt instead of the milk and knox.

quick question about the gelatine. How many teaspoons/tablesppons are in a packet? I'm in NZ and we have gelatine sold in a big box that you have to measure out - nothing as fancy as pre-measured sachets!

I've done something very similar to this! Instead of the evaporated milk, though, I used sour cream. You use a 3 oz box of Jell-O mixed with water (I think we use about 1C), but you split it in half (when mixed) and one half you mix in 1/3C sour cream. That layer goes down first, set for 30 mins in the fridge, and then the "clear" layer of the same color can go on top for another 30 mins in the fridge. This is cool 'coz then the "foggy" layers are actually tinted colors!
