Mini Fruit Pizza Tarts: Summer Recipe with ALDI

A few weeks ago I had a great time shopping at the new ALDI store in
Fountain Valley and checking out all the ALDI-exclusive brands brands including
SimplyNature®,  liveGfree®, and NeverAny! and saving
money on lots of everyday items that I use at home every week.
It was Memorial Day weekend and since I was in charge of making the
dessert for our family BBQ, I decided to use some of the great products I
bought at ALDI and use them to make some adorable  
Mini Fruit Pizza Tarts.


INGREDIENTS

CRUST
1 c. Countryside Creamery Butter
1 1/2 c. Baker's Corner Sugar
2 1/4 c. Baker's Corner Flour
1 tsp Baker's Corner baking Soda
2 tsp Stonemill Essentials Cream of Tartar
1/4 tsp Stonemill Table Salt
2 GoldHen Large Eggs

Using a pastry blender, blend all the Countryside Creamery Butter and dry
ingredients together. If you don't have a pastry blender, you can cut in the
butter with two knives. Carefully mix in the GoldenHen Large Eggs with a fork.


Grease your mini brownie pan.
Use a cookie scoop to put one scoop of the cookie dough crust
into each of the twelve compartments of the brownie pan.

Use your (clean) fingers to evenly spread the crust into the greased pan.
Bake for 10-12 minutes at 400 degrees.

Allow to cool 5 minutes and carefully pop them out of the pan with
a small rubber spatula and let them continue to cool on a wire
rack for 15-20 minutes until they are completely cool.

CREAM CHEESE LAYER
1/2 c. Baker's Corner Sugar
8 oz Fit and Active® Neufchatel Cheese
2 T. Friendly Farms 1% Milk

Combine all the ingredients and mix well.
Spread evenly over the completely cooled cookie tarts.


Next, layer your fruit all over the cream cheese layer.
You can use anything in season. We love using fresh berries.
We used Naturipe Blueberries, Well-Pict Strawberries, Splendid Mango,
Sweet Harvest Mandarin Oranges and Sweet Harvest  Pineapple Chunks.

I enlisted Isabella's help to decorate the little fruit pizza tarts and
they turned out so pretty and we had fun decorating them.
Isabella even took requests for what family members wanted on
their fruit pizza tarts. It was really sweet.


You can stop there and have delicious and pretty mini fruit pizza tarts,
or you can bump up your fruit pizza game and pour a yummy
fruit glaze over the top of all your little tarts.


FRUIT GLAZE
2 c. liquid
(if you don't have enough fruit juice, add water to make up the difference)
3 T. Baker's Corner Corn Starch
Whisk together and cook on medium heat until slightly thickened.
Once the glaze has gone clear and has thickened,
pour the hot glaze over the fruit pizza tarts.
Refrigerate for 30 minutes and devour!


I just love how cute and pretty they are. They are the perfect
summer dessert and I love that I got all the great ingredients from ALDI
and having the opportunity to save up to 50% on my grocery bills when
compared to shopping at other grocery stores.
